Ceallach Tómas Ó Sé
I am the proprietor of this business, A Kilt and a Cuppa. Also, I am the author of this blog. I have been a chef for 25+ years. Having graduated from The Culinary Institute of America, I have worked in many different facets of the foodservice industry. I have cooked at Bed & Breakfasts, fine dining establishments, gourmet take away, privately in people’s homes, in corporate settings & for Greek life at university. Through those many experiences I have been Zagat and AAA rated highly.
In 2007 I took a position with what was then, McCarthy’s Tea Room in Bethlehem, PA. For seven years I ran the front and back of the house, along with my wife, Maura. Cooking there I instantly knew what type of food I was to fall in love with most, Irish and British. This is the food of my ancestors that, in the past, I had not really ever given much of a second glance to. It is this food I relate to most. These types of tomes predominately fill my cookbook shelves now. We do not do “plastic paddy” cookery. What we do is as authentic as to what you would find over there. It will never be like someone else’s mother made, but we try for as close as we can. We recently had a customer purchase our scones and tell me that they were the best scones she has had in this country. She has lived here for 46 years!
The Rest of the Story…
As I stated above, not only do I write the blog posts, but we cater as well. I have taken many of the ideas and concepts that I served at the tea room, and made them available for teaching classes, private dinners, and take away. I’ve made it my goal to not only have people read about what we do here, but to also experience our food (at the moment only here in the Lehigh Valley until we figure out shipping). Chances are you probably have already experienced our food if you were a patron of McCarthy’s Tea Room. We built quite a following with all of the things we created and implemented there. This is the next chapter to that whole story. Just because we left, it does not mean that the passion did not move on with us.
It is my hope to create a page that gets us not only notoriety here in the US but back across the pond as well. The long term goal is to eventually settle over there when all of the kids are grown and finished with school. I would love to be able to teach there in a recreational setting such as River Cottage. The sky is the limit! Until then we will keep at it here in the States and hopefully get noticed for what we do here.
