Showing off my Festy Cock…..

 

The Pennsylvania Dutch have their Faschnachts, the Polish have their Paczki, the British have Pancake Day. But only the Scots could come up with the Festy Cock. So, when I read about the Festy Cock, you know I have to make it. From the same country that consumes clapshot, clootie dumpling, and Cullen skink, this culinary oddity appears too. 

On Pancake Day in Scotland the locals like to eat “festy cock”, the word festy is linked to Festern’s E’en, which is the day before Shrove Tuesday, when cock fighting took place. You make the dish by rolling out finely ground oatmeal and folding it into a rough bird shape before baking and eating as a substitute for a cockerel.

Sure, we had pancakes today. We even had two kinds – buttermilk and Scottish oat. Somehow though, Festy Cock intrigued me. So I am finishing up my last night before Lent starts with a cuppa of whisky tea, a bit of horseradish cheddar, and the Festy Cock. Tomorrow starts 40 days of Penance. It also starts 40 days to make myself a better person, a better chef, and better person of faith. I look forward to the challenges that lie ahead. #festycock
